Roasted Cauliflower with Garlic Sage Butter

Olive oil

1 whole cauliflower - leaves trimmed

150g Herbivore™ Butter - room temperature

1 whole bulb of garlic

Small bunch of sage leaves

Salt and pepper

Method


Heat oven to 180°C Fan Bake.

Rub the cauliflower with 3 TBSP of olive oil.

Place into a baking dish slightly larger than the cauliflower.

Take the whole bulb of garlic and, with a sharp knife, cut away the top 1/3 of the bulb. Be sure to cut the pointed end, not the flat root end.

Wrap the bulb in tinfoil, cut side up, and drizzle with olive oil. Twist up the foil sealing in the garlic, add to the dish alongside cauliflower.

Bake for 1 hour.

Remove the garlic from the foil and squeeze into a bowl with the Herbivore® Butter. Add the chopped sage, roughly mix and season with salt and pepper.

Generously smear the butter over the whole cauliflower.

Return cauliflower to oven for another 20-30 minutes, basting a few times with the melted butter until the cauliflower is golden brown and you can easily poke a knife into the stem.
