In the oven
Pairing excellently with vanilla, Herbivore® makes for perfect melt-in-your-mouth butter cookies.
200g Herbivore® at room temp
70g icing sugar
1/4 teaspoon vanilla paste
200g plain flour
40g corn flour
Pinch of salt
20ml cream
Sugar for dusting once baked
1. Pre-heat oven to 165°c
2. Beat the Herbivore®, icing sugar and vanilla together until light and fluffy
3. Sieve the flour and corn flour together, then add mix until just incorporated then add the cream and mix
4. Transfer to a piping bag with a star nozzle and pipe into rounds on a lined baking tray
5. Bake for 13–15 minutes turning once or until golden brown on the edges
6. Remove form the oven, sprinkle with sugar and allow to cool on a wire rack
