BBQ Corn with Chilli Lime Butter

6 Corn Cobs, husks removed

75g Herbivore® Butter (room temperature)

1 Tbsp chopped coriander

1 small chilli finely diced

zest of 1/2 lime

1 Tbsp lime juice

6 lime wedges

Smoked salt

Method


Preheat the BBQ grill to medium-hot.

Lightly oil the hotplate and grill the cobs for about 15 minutes. Turning often until cooked tender and lightly charred. Set aside.

Meanwhile, mix the Herbivore® Butter with the coriander, chilli, lime juice and zest (note: if the lime isn't emulsifying easily, slightly warm the butter, but don't melt.)

Spread each cob with the chilli lime butter, season with smoked salt, and serve with lime wedges.
